Some great suggestions already put forth. I'll add to that a little and do some summing up.

TCU, Liberty, Messiah College, SMU -- all great choices with a strong Christian presence.
along Catholic lines - CUA, DePaul and several others
Baylor is good, but VERY expensive. Nonetheless, they are a great school with a strong music program.

Some of the secular schools in Texas are fantastic and have large Evangelical communities, you might like to look into those.

My alma mater is Brigham Young University, another religious institution with a very strong music program. Not likely that an Evangelical would want to attend it, but I am just throwing that out there as an option.

In response to kehaulani, I am open to many different denominations of schools, but interdenominational is preferable to me. Anyway, thanks to everyone for the help! I certainly have some research to do!

+1 for Jon Burgess. I worked with him when he was in the Florida Orchestra in Tampa.
