To keep the goose of a bagpipe filled well enough to blow a bagpipe requires many years to develop the lung wind power, then conditioning the double reed of the chanter requires the skill equal to that of a bassoonist or oboist, but don't attempt to play bagpipe music on a trumpet or you might expect to be hit by rotten tomatoes or tarred and feathered and run out of town, here or even in the UK. I've a practice chanter here somewhere along with a piper's book.

It depends what you want to do with the saxophone, the saxophone is a very versatile instrument, mouthpiece and reed combination can change the way of playing (classical or "jazz").
