Great topic...Here's a few that I find to be a real challenge:
Brahms # 2-at the end of the first.
Beethoven # 7- Third Movement...Two isolated g's at the top of the staff.
Anything written by Haydn

They always seem softer and higher than you want them to be.
Sibelius # 2
The end of the Parsifal Oveture.
Schumann # 2.
