If the dealer is honest, he would tell you that the hardware has NOTHING to do with Jazz, Classical, or Country - it is the player. It is possible to customize any horn, the question is why? I am pretty much convinced that most custom manufacturers know more than we EVER will about what works and many of our "options" have been designed to be sonically harmless.

The only meaningful way to find out about a horn is to play it for an extended time. EVERY quality instrument is suitable for every genre of music. The only option that I have never seen is your "valve speed" one. Generally valves are designed to be "fast" and "smooth".
