Out here them's called "Rocky Mountain Oysters" or "Prairie Oysters". They're a staple at branding season on the ranches. You can even watch them being harvested, they're so fresh.

Breaded and deep fried in a pot that's hung over the same fire used for the branding irons.

Thanks...but I think I'd rather try the quiche.
